Sausage Beans & Greens
This is one of my favorite comforting meals that is easy to make and can be enjoyed any day of the week and in any season! It uses just a few simple ingredients and is packed with plant protein with the combination of vegan sausage and beans. It’s my favorite kind of meal which is one that’s made in just one pan. Give it a try and feel free to mix up the types of beans and greens.
Serves 4
Ingredients
4 vegan Sausages (400g)
1 medium Onion cut root to stem
32 oz (908g) Large Butter Beans, rinsed
4 cloves Garlic, minced
2 tsp (10ml) Neutral High Heat Oil
1 tsp (5g) Red Chili Flakes (optional)
1 Tbsp (15g) Miso Paste
1/2 cup (118ml) Vegan Beef or Vegetable Broth
5 oz (140g) Mixed Baby Greens
Salt & Pepper to taste
Serve with grated vegan parmesan and fresh micro greens
Directions
1.Slice the sausages into 4-5 pieces on the diagonal and sauté them on medium high heat until all sides are nicely browned. Remove them from the pan and set aside.
2.Heat the oil in the same pan on medium heat. Add the sliced onions and red chili flakes and sauté until almost translucent, about 5-6 minutes.
3.Add in the garlic and continue cooking for another 2 minutes or until the garlic is fragrant. Deglaze the pan with the broth and scrape up any bits leftover from cooking the sausage.
4.Add in the miso paste and stir until completely dissolved. Add in the beans and continue cooking for 5 minutes before adding in the greens. Mix well and then cover the pan to help wilt the greens and continue cooking for another 5-7 minutes.
5.Add the cooked sausage back to the pan, nestling them within the greens and beans and heat through before serving.
