Miso Butter Daikon and Mushrooms

I found this recipe for the Miso Butter Daikon from okonomikitchen.com and knew immediately that I had to give it a try. Daikon Radish is a bit milder than typical red radish and when cooked has a great texture and neutral taste. When paired with the delicious umami flavors in the sauce it makes for an absolutely yummy dish. Of course I added some King Oyster Mushrooms to the mix because their meaty texture goes so perfectly. I followed her recipe with some very slight modifcatons in order to use the same sauce for the Mushrooms.

Ingredients

2/3 of a large Daikon Radish cut into (6) round pieces that are 1 1/2” thick

7 oz (200g) of King Oyster Mushrooms sliced lengthwise (not too thin)

1 1/2 tsp Umami or Mushroom Powder (7.5g) (Trader Joe’s makes an Umami Powder)

2 tbsp Sake (30ml) optional but recommended

3 tbsp Vegan Butter (30g)

2 tsp Soy Sauce or Tamari (10ml)

2 tbsp Mirin (30ml)

2 tsp Sugar (8g)

3 tbsp Miso Paste (60g)

2 Garlic cloves minced

1-2 Tbsp (15-30 ml) of Water as needed if you find the sauce really thick.

1 Green Onion for garnish

Directions

1. Peel the Daikon Radish and cut 6 pieces from it. Rub each side with the Sake and Umami Powder and place into a microwave safe container with a sealable top. Microwave the Daikon for 2-3 minutes covered or until the Daikon is tender to a fork.

2. Mix together the Miso Paste, Mirin, minced Garlic, Soy Sauce and Sugar. Set aside

3. In a large frying pan, melt 1 1/2 Tbsp of Butter on high heat. Cook the Daikon until you get a nice sear or char and repeat on the other side. Should take about 1-2 minutes per side.

3. Turn the heat down to medium and pour in 1/2 of the sauce making sure to cover both sides of the Daikon. Let cook for a minute or two or until the sauce has thickened. Remove the Daikon and pour over any leftover sauce.

4. In the same pan add the remaining Butter and sauté the sliced Mushrooms on both sides before adding in the remaining sauce. Let them cook for 1-2 minutes.

5. Serve both the Daikon Radish and Mushrooms with a bit of chopped Green Onion
