Makes 11-12 cups of party mix.
Ingredients
3 1/2 cups (135g) Corn Chex Cereal
3 1/2 cups (135g) Rice Chex Cereal
1 1/2 cups (80g) Mini Pretzels
1 1/2 cups (80g) Mini Crackers
1 1/2 cups (235g) Mixed Roasted Unsalted Nuts
Maple Miso Glaze
1 Stick (113g or 1/2 cup) Vegan Butter
2/3 cup (157ml) Maple Syrup
1/3 cup (90g) White Miso
1 Tbsp (15ml) Soy Sauce
2 tsp (8g) Garlic Powder
1 tsp (4g) Chipotle Powder or more to taste
Notes
Nuts: Use any mix of nuts you like, I used 1/2 cup each roasted unsalted almonds, cashews and peanuts. Make sure to use unsalted as the glaze contains plenty of saltiness from the miso and soy sauce.
Crackers: I used mini saltine crackers, but you can use any plain mini toast or crackers you find.
Pretzels: I used itty bitty pretzel twists but you could use any mini twists or pretzels sticks.
Directions
1.In a large bowl, combine the Chex cereals, pretzels, crackers, and nuts.
2.Melt the butter in a saucepan over medium low heat. Add the spices and stir until well combined. Add the miso paste and whisk until smooth.
3Add the soy sauce and maple syrup, whisking until the glaze is thoroughly combined.
4.Pour about one third of the glaze over the cereal mixture and gently fold with a silicone spoon to coat. Repeat, adding the remaining glaze in thirds and folding after each addition, until everything is evenly coated.
5.Divide the mixture between two lined baking sheets, spreading it into a single layer as much as possible. Bake at 250°F for 1 hour, stirring and redistributing the mixture every 15–20 minutes to help it dry evenly. The mix is ready when it has dried out considerably and turned a deep brown color.
6.Let the mix cool completely before enjoying. Store in an airtight container for up to 7 days.
