Lentil Soup

My love for Soup is eternal and with roughly 7 ingredients Lentil is one of the easiest soups to make. It’s a great source of plant protein and makes awesome leftovers. You can create an entirely new dish by pouring it over rice, pasta or even a sweet potato! I love the fresh Parsley as a green but feel free to get creative and add things like spinach or kale. This is a great Soup to have in your arsenal of easy and comforting recipes.

Serves 4 - 6


 
 

Ingredients

1 cup Green Lentils
1/3 cup Red Lentils
1 small Onion chopped 
3 cloves of Garlic minced 
3 med Carrots
3 stalks of Celery 
1 Golden Potato cubed
1 tsp of Better Than Bouillon no beef base (or any Veggie Bouillon)
2 tsp of Thyme
1/2 cup fresh Parsley chopped 
6 cups of water 
Salt & Pepper to taste

Directions

1.Sauté the Onion, Celery and Carrot until the Onions become translucent 

2. Add in the Veggie Bouillon, Potato, Garlic, Thyme, Salt, Pepper and Lentils. Continue cooking for a few minutes, making sure to mix well 

3. Add in the water, cover the pot and let simmer on med - low heat for 30 minutes or until the Lentils are completely tender

4. Check for seasoning and add in the chopped Parsley. Mix well and serve.
