Creamy Polenta w/ Mushrooms & Onions
Talk about satisfying comfort food. This is a delicious combination of creamy Polenta topped with a rich gravy filled with sautéed Mushrooms, Pearl Onions and plenty of Herbs. It may seem like there’s a lot of steps to the recipe but I promise It’s really easy and so worth it!
Serves 2
Ingredients
16 oz Baby Bella Mushrooms
1 1/4 cups Pearl Onions
1 cup Medium Ground Corn Meal
4 cups of Vegetable Broth
1 cup Follow Your Heart grated Parmesan
3 Tbsp of Milkadamia Vegan Butter
2 Tbsp of Flour
3 Tbsp of fresh Thyme
2 Tbsp of fresh Parsley
1/2 tsp of Garlic Powder
1/2 tsp of Tarragon
1 Tbsp of Sherry
Salt & Pepper to taste
Directions
1. Sauté the Onions in 2 Tbsp of Butter until they start to get a little bit of color
2. Add in the Mushrooms and 1 1/2 Tbsp of the fresh herbs, Spices, Salt & Pepper and continue to cook until the mushrooms have cooked down
3. Add in the Sherry and cook for a few more minutes to cook of any alcohol ( you can omit the Sherry)
4. Add in the Flour and mix well making sure to coat everything. Continue to mix for a few minutes before adding 1 cup of Vegetable Broth
5. Bring the mixture to a soft boil until it thickens up. Continue mixing while it cooks. Keep on low until ready to use
6. In a separate pot, bring the remaining Vegetable Broth to a boil and add in the Corn Meal
7. Lower the heat and mix continuously for about 10-12 minutes so the Corn Meal cooks through
8. Add in the Tbsp of Butter and cup of Parmesan and stir well
9. Use the remaining herbs for garnish and serve with a generous helping of Mushroom & Onions
