Creamy Kimchi Udin
This creamy udon dish is pure comfort with a twist. Rich, silky udon noodles are coated in a luscious cream sauce, while kimchi cuts through with a bright, tangy kick that keeps every bite balanced and exciting.
The contrast in flavors is what makes this dish unforgettable. It’s deeply savory, gently smoky, and just spicy enough to linger. Cooking the kimchi mellows its sharpness and deepens its flavor, while still bringing a boost of nutrients. For an extra layer of freshness, crunch and probiotics, finish it with a small topping of raw kimchi.

Ingredients
2 packages (400g) fresh or frozen Udon Noodles
1 cup (160g) Kimchi, roughly chopped
1/2 cup (120g) Cashew Cream or other Plant Based Cream
1/3 cup (80ml) - 1/2 cup (118ml) Reserved Udon Water
1/2 small (100g) Onion, sliced thin
3-4 cloves Garlic, pressed
2 Tbsp (30ml) Kimchi Brine
1 1/4 Tbsp (25g) Gochujang Paste
1 Tbsp (15ml) Soy Sauce
1 Tbsp (15ml) neutral Oil
2 Green Onions, sliced thin (white and green parts separated)
Cashew Cream (can be made ahead)
1/3 cup (45-50g) Raw Cashews, soaked & rinsed
1/3 (80ml) cup Water
pinch of Salt
1.Cover the cashews with enough hot water to cover and soak for a minimum of 30 minutes. Drain and rinse the cashews.
2.Add the rinsed cashews to a high speed blender along with the water and salt. Blend until completely smooth and creamy. Add more water 1 Tbsp at a time if needed. Refrigerate if not using immediately.
Directions
1.Heat the oil in a large pan on medium heat. Add in the onions and sauté for 5 minutes or until translucent.
2.Add in the sliced shiitake mushrooms and continue cooking for another 2 minutes before adding in the garlic and white parts of the green onion. Cook until the garlic is fragrant, about 1-2 minutes.
3.Add in the gochujang and mix well. Add in the chopped kimchi and kimchi brine. Mix and continue cooking until heated through. Add in the cashew cream and mix well. Thin with reserved udon water as needed.
4.Add the cooked udon noodles and toss until well coated. Heat through and serve hot. Garnish with sliced green onions and enjoy!
