White Bean & Basil Dip

This dip is a delightful combination of creamy white beans and the aromatic flavors of basil, parsley, garlic and lemon. It’s super easy to make and doesn’t involve any cooking! Enjoy this dip’s smooth texture with a variety of vegetables and crackers or give it a try as a spread on a sandwich. Perfect for your next gathering or a great way to meal prep a healthy and delicious snack.

Ingredients

30 oz (878g) cooked White Beans such as Cannellini or Great Northern (I used canned)
2 Green Onions
2-3 cloves Garlic
8 -10 Leaves of fresh Basil
1/4 cup (15-20g) Parsley roughly chopped
Zest of 1 Lemon
Juice from 1/2 a Lemon
2 Tbsp (30ml) good Olive Oil plus more for drizzling
Salt & Pepper to taste

Directions

1. Rinse and drain the beans if using canned and add them to the food processor.

2. Add the garlic, green onion, basil, parsley, lemon zest, lemon juice, salt, pepper and olive oil. Pulse until everything comes together and the beans have become nice and creamy. Stop to scrape down the sides if necessary.

3. Pour out into a serving dish and smooth out. Drizzle with a little bit of good olive oil. Serve with fresh crackers, vegetables such as radicchio, romaine hearts, peppers and grilled crostini bread. It also makes a great sandwich spread.
