Spinach Artichoke Sliders

Skip the dip and make these deliciously cheesy spinach artichoke sliders! They’re the best of both a creamy dip and a gooey grilled cheese sandwich. They are super easy to make, a bit messy in the best way and so yummy! They are also a great way to feed a crowd!

Ingredients

12 Dinner or Hawaiian Style Rolls
5 oz (142 g) Baby Spinach 1 small Onion diced
8.5 oz (240 g) canned Artichoke Hearts
6 slices of Follow Your Heart Smoked Gouda Cheese
3/4 cup (105 g) Follow Your Heart Mozzarella shreds
1/2 cup (60 g) Follow Your Heart Grated Parmesan Cheese
1/3 cup (80 g) Vegan Sour Cream
2-3 Tbsp (15-45 g) Vegan Butter
1 tsp (5 g) dried Thyme
1 tsp (5 g) Garlic Powder
pinch of Red Chili Flakes
Salt & Pepper to taste

Note:This recipe was developed for Follow Your Heart but feel free to use any vegan cheese.

Directions

1. Melt 1 tbsp of vegan butter in a large pot on medium low heat. Sauté the onions in the melted butter for 3-5 minutes or until translucent.

2. Add in the chopped artichokes, thyme, garlic powder and a pinch of red pepper flakes. Let everything cook for a few minutes before adding in the chopped spinach.

3. Allow the spinach and artichoke mixture to heat up before adding in the vegan sour cream, grated parm and shredded mozzarella. Mix occasionally until everything is melted together and creamy. Season with salt & pepper and set aside.

4. Cut open the rolls and butter each half. Grill each buttered half on a griddle or frying pan on medium high heat until golden brown and toasty about 1-2 minutes.

5. Place the grilled rolls onto a baking sheet. Spread the spinach artichoke mixture evenly onto the bottom halves of the grilled rolls. Place the slices of cheese on top and cover with the tops of the rolls.

6. Bake at 375 for 15 -20 minutes or until cheese is melty. Serve warm.
