Simply Delicious Bolognese

I love a good Spaghetti Meat Sauce but there’s something about the extra veggies in a bolognese that give it so much flavor! This recipe was easily Veganized by using Beyond Beef Ground. Don’t worry if you don’t have Beyond products near you because now a days there are so many other companies making Plant Based ground meat that one or more should be available.

This was adapted from a recipe by Giada de Laurentis

Serves 4


 
 

Ingredients

1 package of Beyond Beef

2 tsp of Grapeseed Oil

1/2 small Onion

3 cloves of Garlic

1 Carrot diced

1 Rib of Celery diced

1/4 cup of chopped Parsley

8-10 Fresh Basil Leaves

1 28 oz Can of San Marzano Tomatoes

1/2 cup grated Parmesan (I like Follow Your Heart or Violife)

1/3 cup of Water

Salt & Pepper to taste

Pasta of your choice ( I used Paccheri which is like a large Rigatoni shape)

Directions

1. Sauté the Onion and Garlic in the Oil until the Onions are translucent

2. Add in the Celery and Carrot and cook for another 10 minutes on med - low heat

3. Turn up the heat a little and add in the Beyond Beef and sauté until it browns. Using a spatula or spoon, break apart the Beyond so that there are no large clumps

4. Add in the Parsley, Basil and Tomatoes and break the Toamtoes apart as well. Add in the Water ( I use the 1/3 cup of Water to get any leftover tomato bits out of the can)

5. Cover the pot and lower the heat to med - low. and simmer for 35 minutes. Stir occasionally

6. Add in the grated Parmesan and heat through for another 5-10 minutes before serving with your favorite Pasta
