Lomo Saltado

I’m always excited to find new dishes with a deep cultural history. I’m even more exicted when I can easily Veganize them! Lomo Saltado is one of the beloved dishes of Peru. What’s so interesting about this dish is the culinary fusion of Chinese and Peruvian cultures and the Chifa restaurants that originated to serve them. The Chinese have a long history in Peru which created the inevitable melding of cuisines. Lomo Saltado is a str fry of marianted Beef, Vegetables and French Fries and is typically served with Rice. Before you balk at the double starches you really must give it a try. The mix of textures it creates is so good and there is also a wonderful blend of flavors from the Soy Sauce and Peruvian Aji Amarillo Pepper. I opted to use a non breaded Vegan Chicken cutlet that I marinated in Steak seasoning but you can use any Vegan Meat such as Gardein Beefless Tips or a Seitan product.

Update: Since I originally veganized this recipe a couple of years ago there have been many new Vegan Steak products realeased into the market. Two of which are Meati and Beyond Steak. So I decided to remake the recipe and create an easy to follow video.

If you sre not into Vegan meat alternatives, try using meaty mushrooms like portobellos.

Serves 2-4


 
 

Ingredients

8 - 10oz (250g-283g) Vegan Steak (I used one from Meati)

1 medium Red Onion (150g) cut into eighths
2 medium Tomatoes cut into wedges or eighths
3 cloves of Garlic minced
12oz (330g) ) of frozen French Fries
1 Tbsp (15ml) Soy Sauce
2 Tbsp (30 ml) of Red Wine Vinegar
3 Tbsp (30-45 ml) of Avocado Oil or other high heat oil
2 Tbsp (30ml) of Aji Amarillo Paste or to taste
1/3 cup Cilantro roughly chopped

White Rice to serve (about 1 cup (200 g) cooked rice per person)

Steak Marinade
(if using non breaded vegan chicken or mushrooms )

2 Tbsp (30 ml) Dark Soy Sauce
1 tsp (5 ml) Red Wine Vinegar
2 tsp (10 ml) Vegan Worcestershire Sauce
1 1/2 tsp (7.5 g) Montreal Steak Seasoning
1 tsp (5 g) Onion Powder
2 tsp (10 g) Nutrtional Yeast
1 Tbsp (15 ml ) Water

Directions
Create the marinade by mixing together all of the ingredients. Add the strips of Vegan meat to a large resealable bag/container and pour the marinade over. Refrigerate for 1-2 hours.

Directions

1. Bake your French Fries according to package directions and as they cook start the rest of the dish.

3. Heat 1 1/2 Tbsp of oil in a large frying pan on medium heat. Sauté the steak for 3-4 minutes. Flip occasionally to cook evenly on all sides. Remove from the pan and set aside.

4. In the same pan, add another 1 1/2 Tbsp of oil to the pan and sauté the onions for about 2-3 minutes or until they start to soften. Add in the garlic and continue to cook until fragrant (about 1-2 minutes)

4. Add in the tomatoes and cook for another 3-4 minutes before adding back the steak. Then add the soy sauce, vinegar and aji amarillo paste. Mix well.

5. Cook everything for 2-3 minutes and add in the baked French Fries. Mix well to coat everything and heat through.

6. Serve immediately with some chopped cilantro and a side of Rice.
