Furikake Rice Krispie Treats

These rice krispie treats are anything but ordinary, not that I would turn down an ordinary krispie treat! They are nostalgic, easy to make and just really yummy! There was a very long time when vegan marshmallows didn't exist and therefore neither did vegan rice krispie treats! I saw this genius salty version on line from Lisa Lin and knew I could easily veganize them! They are made the exact same way but with some extra yummy ingredients. The recipe makes plenty to share but I can’t promise that you’ll want to!

Furikake is a Japanese condiment that is typically used on rice. In its most basic blend it contains toasted sesame seeds, nori seaweed, salt, sugar and fish flakes. They do make vegan options, so make sure to read the label of any brand you are purchasing.

Makes 12 squares


 
 

Ingredients

5 cups (140g) Rice Crisp Cereal
1 cup (30g) Rice Cracker Mix
10 oz (283g) Mini or Regular Vegan Marshmallows
4 Tbsp (60g) Vegan Butter
2 Tbsp (30g) Vegan Furikake (make sure there is no fish)

Note

Both Dandies and Trader Joe’s make vegan marshmallows
You can use any rice crisp cereal
Trader Joe’s also makes a vegan furikake

Prepare an 8x8 or 8x10 baking dish by lightly greasing it with oil or butter. Line it with a piece of parchment that hans over the sides. This will help to easily lift out the cooled treats.

Directions

1. Melt the butter in a large pot on medium low heat. Once melted add in the marshmallows and allow them to melt while stirring occasionally.

2. Mix together the rice crackers and rice krispies and pour them into the melted marshmallows. Add in the furikake and mix well. Keep mixing until everything is well coated with the marshmallow.

3. Pour the mixture into a prepared baking dish (see note) Use a piece of parchment or spatula to press the mixture down into the dish.

4. Allow to completely cool. You can speed up the process by refrigerating for 25-30 minutes. Remove them from the pan and cut into 12 squares. They’ll keep in an airtight container for 3-4 days but most likely will be gone before then!
