Cream of Shiitake Mushroom Soup

This is a delicious spin on classic Cream of Mushroom Soup (You can find the classic version here on the site). This recipe plays up the earthy umami flavors of the Shiitake Mushrooms along with the aromatics of Onion, Garlic & Toasted Sesame. It’s super easy to make and is just as comforting as the original.

Serves 4


 
 

Ingredients

10-12 dried Organic Shiitake Mushrooms (you can use 1 cup sliced fresh Shiitakes instead)

1 cup Sprouted Sunflower Seeds ( I use Go Raw)

1/2 cup Onion finely diced

3 cloves of Garlic minced

2 Green Onions sliced

2 tsp of Toasted Sesame Oil

1 tsp of Veggie Bouillon Base ( I use Better than Bouillon)

1 Tbsp of Miso Paste ( I use Cold Mountain Miso)

1 tsp Rice Vinegar

1 Tbsp Light Tamari or Soy Sauce

1 1/2 Tbsp Mushroom Powder (ground dried Shiitakes) (You can either leave out or double the Umami Seasoning)

1 tsp of Umami Seasoning ( I used Trader Joe’s Brand)

2 -3 cups of Water

Directions

1. If using dried Mushrooms like I did, soak them in enough hot water to cover them for 30 -45 minutes or until soft) Cut away the hard stem and slice. Reserve the soaking liquid and set aside. If you are using fresh Mushrooms, slice and sauté them until tender before adding them to the soup in step 5.

2. Soak the Sunflower Seeds in enough hot water to cover them for 30 minutes. Drain and set aside.

3. On Med-Low heat, sauté the Onions in the Toasted Sesame Oil until translucent. Add in the Garlic and conitnue to cook until the Garlic becomes fragrant.

4. Blend together the sauteed Onion, Garlic, the soaked Sunflower Seeds, Veggie Base, Miso Paste, Tamari, Umami Seasoning, Mushroom Powder, 4-5 Shiitake Mushroom slices and 1 cup of Water. Blend until completely smooth and creamy.

5. Add the blended mixture to a pot on med-low heat. Add in the white parts of the Green Onions, the sliced Mushrooms and 1 cup of Water. Bring the soup to a simmer. Add another 1/2 -1 cup of Water if the soup becomes too thick.

6. Garnish with the remaining Green Onions and serve.
