Caribbean Rice and Beans

There are many variations of Red Beans and Rice that come from different cultures across the globe. They all use similar spices, like Allspice, Cumin, Garlic, Onion, Thyme, Paprika, Oregano and Cayenne. Creole or Cajun recipes include the addition of Sausage and Peppers. I love all combinations of Rice and Beans so I combined the seasoning along with Coconut Milk used more in the Caribbean and came up with this delicious and easy dish. This is perfect as a side but even better as an entire meal. Beans and Rice eaten together make up a perfect protein!

Serves 4


 
 

Ingredients

2.5 cups cooked Organic Jasmine or Long Grain Rice ( I used Organic Brown Jasmine)

1 can of Red Kidney Beans

1/4 cup Water

6.5 oz of Coconut Milk

1/2 cup chopped Onions

2 cloves of Garlic minced

2 tsp of ground Cumin

2 tsp of chopped Thyme

2 tsp of Creole or Cajun Seasoning

1 Bay Leaf

Directions

1. Saute the Onions until translucent

2. Add in the Kidney Beans, Garlic and spices and continue to cook on med - low heat for 5-8 minutes (add water to prevent sticking)

3. Add in the Coconut Milk and reduce the heat slightly. Let cook for 10 minutes

4. Add in the Rice and mix well

5. Garnish with Thyme leaves and any other green herb like Parsley or Cilantro
