Vegetable Egg Foo Young

Egg Foo Young is an Asian style savory Omelette with Veggies and typically a protein. I made these all Veggie but you can add things like Vegan Chicken or Vegan Shrimp. The Egg Foo Young is served with a simple Gravy. There are a couple of different ways to make them. The most simple is to mix the Vegetables and Vegan Egg together and then scoop out portions to cook. I went with a different method by cooking each portion of Vegetables first and then adding in a little bit of Vegan Egg at a time. Either way will work and be just as tasty.

Ingredients

1 bottle of Just Egg

1 Carrot julienned

1/3 Red Pepper sliced thin

1 cup of Bean Sprouts

1/2 cup Shiitake Mushrooms sliced

2 Green Onions sliced

Salt & Pepper to taste

Toasted Sesame Oil to cook

Gravy / Brown Sauce

1 cup of Vegetable broth

1 Tbsp of Soy Sauce

1 tsp of Mushroom Powder or Umami Seasoning ( Trader Joe’s makes one)

1 tsp of Sugar or other sweetener

1 tsp of Vegan Fish Sauce (two brands Ocean’s Halo and Fysh Sauce)

Pepper to taste

1 tsp of Toasted Sesame Oil

2 Tsp of Cornstarch mixed with 6 tsp of warm water to make a slurry

Directions

1. Pour a tsp or so of the Sesame Oil onto a hot pan on Med heat

2. Add a little bit of all the Veggies to the Oil, season with Salt & Pepper and let them cook for a minute or two.

3. Add a Tbsp of the Just Egg at a time covering the Veggies. As the Egg cooks it may run so use a spatula to push it back into a nice round pancake shape. Repeat until you use 1/4 of the Just Egg.

4. Let the Omelette cook for a few minutes and flip to cook on the other side. You want both sides to be nicely browned. Repeat until you have made all the Egg Foo Young and used up all the Just Egg.

5. Make the Gravy by adding the Broth, Soy Sauce, Umami Seasoning, Pepper, Sugar and Vegan Fish Sauce to a small pot. Bring the mixture to a soft boil. Add in the Cornstarch slurry and mix well. It will thicken pretty quickly. Mix in the tsp of toasted Sesame Oil once you remove the sauce from the heat. Serve immediately with the Egg Foo Young.
