Veggie Quinoa Soup

This is one of those throw together, really easy to make Soups. It’s great for cleaning out the pantry / fridge to use up ingredients. Substitute any of the veggies and benas that you have on hand. You can also use any grain but I like the texture and added plant protein the quinoa provides.

Serves 4

 

 

Ingredients

1 medium Carrot chopped

1/3 Small Onion chopped

2 cloves of Garlic minced

2 Ribs of Celery chopped

1/2 a head of Cauliflower cut into florets

1 small Yellow Squash chopped 1 can of Green Beans 

1 can of Kidney Beans 

1/3 cup uncooked Quinoa

1 can of Tomato Sauce 

5 cups Water 

1/2 tsp Cumin 

2 Tbsp @bragglivefoodproducts Liquid Aminos or sub light soy sauce

1/4 cup Nutritional Yeast 

2 tsp of Thyme 

1/2 - 1 tsp Date Nectar (optional to balance for a tiny bit of sweetness)

1 Bay Leave 

Pinch of Red Chili Flakes 

Salt & Pepper to taste 

Directions

1. Sauté the onion, garlic, carrot and celery until onions are translucent 

2. Add in the beans and seasonings (except nutritional yeast) and continue to cook on med -low heat for about 15 minutes adding water as needed 

3. Add in quinoa and tomato sauce and rest of water to cover. Turn down heat and cover. Let cook for 25-35 minutes or until quinoa and veggies are fully cooked. 

4. Add nutritional yeast about 15 minutes before soup is done
