Creamed Kale

The perfect side dish to any meal but specially for the holidays. It’s a take on Creamed Spinach that will have you convinced that Kale is truly delicious! It’s super easy to make and tastes just as creamy and decadent as you’d want it to be.

Serves 4 -6


 
 

Ingredients

12 oz (340g) Chopped Kale stems removed
1 cup (140 g) Onion minced
3 cloves of Garlic minced
2 Tbsp (30 g) Vegan Butter
1 Tbsp (15 g) Miso Paste ( I use Cold Mountain Miso)
1/4 tsp Nutmeg
pinch of Red Chili Flakes
6 oz (170 g) Vegan Cream Cheese
1 cup (237 ml) Plant Milk
1 cup (45 g) grated Vegan Parmesan
Salt & Pepper to taste

Directions

1. Prepare your kale by removing the stem and giving it a good chop. Bring a pot of salted water to boil and blanche the kale for 30 -45 seconds. Rinse under cold water and set aside.

2. In a large skillet on medium heat, melt the butter and sauté the onions until translucent. About 3-5 minutes. Add in the garlic and chili flakes and cook until fragrant (1-2 minutes).

3. Add in the plant milk, cream cheese, miso paste and nutmeg. Gently whisk until well combined. Then add in the shredded Parmesean and whisk again until creamy.

4. Add in the blanched kale and mix well. Check for seasoning and allow it to heat through before serving.
