Creamy Tomato Soup



3/4 cup raw Cashews soaked in hot water for 30 minutes and rinsed

1 Large can of  Peeled San Marzano Tomatoes 

1 Small Onion 

2 Cloves of Garlic 

Handful of Basil (roughly 2 Tbsp)

Salt & Pepper 

1/3 cup Nutritional Yeast


1. Sauté the onion and garlic until translucent.

2. Add the tomatoes, nutritional yeast and spices and let simmer for about 10 minutes

3. Add mixture to a high speed blender along with soaked cashews and blend until smooth and creamy (you can use an immersion blender as well)

4. Add water to thin soup if necessary

5. Bring up to temperature on the stove before serving
