Creamy Mac N Cheese

One of my favorite classic comfort foods. This recipe is super versatile and can easily be made to meet a Whole Food Plant Based diet by omitting the Vegan Cheese.


 
 

Ingredients

1 Medium Carrot

1 sm - med Gold Potato 

1/4 of a Small Onion 

1 clove of Garlic 

2/3 cup @terrasoul Raw Mylk Cashews 

2 tsp of Yellow Mustard 

1/2 cup @bragglivefoodproducts Nutritional Yeast

2 tsp of @bragglivefoodproducts Liquid Aminos 

1 cup of water or unsweetened @silk Cashew Milk 

1 tsp of Miso Paste

1 cup of Vegan shredded Cheddar 

Salt & Pepper to taste

Small Pasta of your choice



Directions

1. Soak the cashews in hot water for at least 30 minutes. Rinse and set aside 

2. Boil the peeled carrot, potato, onion and garlic until everything is fork tender 

3. Blend together the vegetables with the nutritional yeast and seasonings until creamy

4. And in the cashews and continue to blend. Check for seasoning

5. Add in the shredded or grated vegan cheese and blend until smooth

6. Pour over cooked pasta of your choice!
