Short Bread Thumbprint Cookies

Filled with delicious Strawberry Fruit Spread and Creamy Chocolate Hazelnut Spread from @rigoniasiagousa.

The recipe was adapted from the @edgyveg and makes 3 dozen medium size cookies!



3 cups @bobsredmill All Purpose Organic Flour 

2 cups of @meltorganic Rich & Creamy Spread 

1/2 cup @thedatelady Date Sugar

1/2 cup @wholefoods Vegan Sugar 

2 tsp of @frontiercoop Vanilla

1 tsp of @wholefoods Organic Almond Extract


1. Cream together the butter and sugar until well incorporated 

2. Add the vanilla and almond extracts and continue to mix

4. Slowly add in the flour a cup at a time 

5. The dough should be slightly wet/tacky but able to handle. If not add a bit more flour 

6. Freeze dough for 15 minutes in order to work with it

7. Roll about 2 Tbsp worth of dough into a ball and using a tsp push into the dough to make the “thumbprint”

8. Fill the cookies with 1 tsp of filling and bake at 325 for 16-18 minutes until lightly browned
