Veggie Quinoa Soup

Veggie Quinoa Soup

Really easy to make and you can sub whichever veggies you like. The quinoa adds a nice texture and additional plant protein.




1 medium Carrot

1/3 Small Onion 

2 cloves of Garlic 

2 Ribs of Celery

1/2 a head of Cauliflower 

Can of Green Beans 

Can of Kidney Beans 

1/3 cup uncooked Quinoa

Can of Tomato Sauce 

4-5 cups Water 

Small Yellow Squash 

1/2 tsp Cumin 

2 Tbsp @bragglivefoodproducts Liquid Aminos 

1/4 cup @bragglivefoodproducts Nutritional Yeast 

2 tsp of Thyme 

1/2 - 1 tsp @dvashorganics Date Nectar (optional to balance for a tiny bit of sweetness)

Bay Leave 

Pinch of Red Chili Flakes 

Salt & Pepper to taste 


1. Sauté the onion, garlic, carrot and celery until onions are translucent 

2. Add in the beans and seasonings (except nutritional yeast) and continue to cook on med -low heat for about 15 minutes adding water as needed 

3. Add in quinoa and tomato sauce and rest of water to cover. Turn down heat and cover. Let cook for 25-35 minutes or until quinoa and veggies are fully cooked. 

4. Add nutritional yeast about 15 minutes before soup is done
